Jerk is a style of cooking native to Jamaica, in which meat is dry-rubbed or wet marinated with a hot spice mixture called Jamaican jerk spice. Jerk seasoning principally consists of allspice and Scotch bonnet peppers. Other ingredients may include cloves, cinnamon, scallions, nutmeg, thyme, garlic, brown sugar, ginger, and salt.
Cassava is a long tuberous starchy root that is an essential ingredient in many Latin American and Caribbean cuisines. It is eaten mashed, added to stews, and used to make bread and chips. Cassava, also known as yuca, must be cooked or pressed before it’s eaten.
Jamaican Escovitch Fish is a dish where fried fish is topped with a spicy sauce and pickled vegetable medley. The vegetables which can be sweet peppers, onion, chayote and carrots are lightly cooked in a vinegar sauce that it’s seasoned with garlic, thyme, Jamaican pimentos and scotch bonnet pepper.
It is our policy to add a 15% service charge to serve as gratuity for your server and 18% for parties of 6 or more. 3% of this charge will go to our Back of House (BoH) staff in the form of a Kitchen Administrative Fee. Of course any larger percentage of gratuity is always welcome. Your gratuity are their salaries.
